There's plenty of toddler advice around, especially relating to toddler feeding. I've found a sure fire favourite which provides ingredients from each of the food groups that toddlers actually LOVE!! Try your little one on this Zucchini Slice recipe.
400g Zucchini - grated (or try 400g carrot or half & half)
1 Large Onion - finely chopped
4 Rashers of Bacon - finely chopped
1 cup Self Raising Flour
5 Eggs - lightly beaten
1/2 cup Melted Butter or Cooking Oil
1 cup Tasty Cheese - grated
Salt & Pepper
Preheat oven to 180 deg C. Place all ingredients together into a large bowl and mix well to combine (I find using my hands the best method). Grease and flour a suitable slice tin. Press the mixture into the tin and place in the oven for 15 to 20 min until brown on top. Remove from oven and allow to cool slightly before turning out and cutting into portions. Allow to cool completely on a cake rack . This recipe is suitable for freezing.
